In the menu creator (I'm using the new theme Omega!) I'd love the ability to create sub-menus. I'm assuming it'd be a simple mouse over the parent menu, that would show the additional menu items. And that there would be a down arrow/carrot on the menu, indicating there are nested submenus.

This is a badly needed item. I have had to use the 'Menu' category to define unique 'Pages' for the site. For those of us trying to emulate a newspaper this is a real handicap.
